McDonald's Style Homemade Chatpata Alu Naan

Ingredients:

  • Recipe Makes 8-10 Chatpata Alu Naan

  • Instant Naan Dough -

  • 1 cup - Maida

  • 1 tsp - Salt

  • 1 tsp - Sugar

  • ¼ tsp - Baking powder

  • ⅛ tsp - Baking soda

  • ½ cup - Dahi (to knead dough, more or less)

  • 1 tsp - Oil Dry Flour - as required to roll naans

  • Tikki -

  • Oil - 2 tbsp

  • Jeera - 1 tsp

  • Peas - ¼ cup

  • Ginger garlic paste - 1 tbsp

  • Rice flour - ¼ cup

  • Green Chutney - 3 tbsp

  • Salt - to taste

  • Amchoor - 1 tsp

  • Garam masala - ½ tsp

  • Red chilli powder - 1 tsp

  • Cumin powder - ½ tsp

  • Potato - 5 (boiled & mashed)

  • For Batter -

  • Maida - 6 tbsp

  • Corn Starch - 6 tbsp

  • Salt - ½ tsp

  • Water - to make a batter

  • Bread Crumbs - 1 cup

  • Oil - to shallow fry tikkis

  • For the Sauce -

  • 1/2 cup mayonnaise

  • 2 tbsp red chilli sauce

  • 1 pinch red food color To assemble & serve

  • 2 Onions - chopped

  • Butter - to grill

Steps:


Naan Dough:

  • Take a parat/kneading plate, add 1 Cup maida ,pinch of salt ,1 tsp sugar,1/4 tsp baking powder and half the quantity baking soda (approximately 2 pinches) .

  • Mix it well and add dahi/yogurt to make a very soft dough.

  • Take 1 tsp oil and start kneading the mixture for about 2/3 minutes to make it super soft and pliable.

  • After the dough is ready ,keep it aside in a damp cloth for about 30 minutes.


Alu Tikki:

  • Take a pan/kadhai ,in high flame add 2 tsp oil,Once the oil is hot we can take 1 tsp cumin seeds/jeera.

  • As the cumin seeds seasons add 1/4 cup of peas ,along with it add ginger garlic paste.

  • Cook this for about 1 minute,be careful the peas can splutter.

  • After 1 minute add 1/4 cup of rice flour,Roast it on a low flame and continuously stir it for 2 minutes.

  • If you don't roast it well then your alu tikki might have a raw taste so cook precisely on that.

  • After this add 3 tsp of green chutney (paste of coriander leaves, chilly ,piece of ginger,water,salt and cumin seeds ) to make it a little spicy.

  • Once again cook the rice flour with the chutney for 2 minutes.

  • After the mixture is cooked well add salt for taste ,amchur powder for sour flavour ,garam masala ,red chilly powder and cumin powder .

  • Now cook this for another 2/3 minutes.

  • Cooking in each step is very important as it adds unique flavour.

  • After that add the mashed/boiled potatoes ,give it a really nice mix.

  • Then our alu masala will be ready.

  • While it cools down make the naan's.

Making of Naan:

  • Knead the dough into smaller portions for making the naan.

  • Dust it with the dry flour and roll it into a shape of your choice (similar to samosa's dough).

  • After that heat up a non-stick pan to pre-cook the naan's.

  • In medium flame cook it for about 30 sec each side ,you can also cover the pan if you want to.(It will be better if you cover it ,that's what I've done).

  • Just get it off the raw flavour.

Making of the Alu Tikki:

  • Same as the dough making ,divide the masala into smaller portions,usually while making tikki we make bigger tikki's but for this recipe you'l have to make super small tikki's (The stored one's are way smaller) .

  • Just make sure it will fit in naan.

  • According to the ingredients you'll be able to make about 8-10 Tikki's.

  • It's kind of a tedious work but it's worth waiting.

  • After this take a mixing bowl and add same quantity of maida and corn starch (1/4 cup) and salt swad anusar (I know i just wanted to write that once ) .

  • Mix it well and make a batter using water.

  • {Fun fact : If you make a thicher batter you'll get a crunchy tikki and if you make a thinner batter you'll get a crispy tikki}

  • I've used a thicker batter because it holds more bread crumbs.

  • Take a bowl of bread crumbs (Place the breads inside the mixture jar and blend it).

  • After that take the alu tikki dip it inside the batter on the both sides and then roll it around the bread crumbs.(Do this for as many number of tikki's you’ve made)

Frying :

  • After that shallow fry the tikki's on medium-high flame.(Fry the until they are golden-brownish)

  • {You can also deep fry if you want/Place them inside the oven at 250°C for 15 minutes (Pre-heat the oven before cooking them)}.

Sauce:

  • Take a bowl add 1/2 cup mayonnaise ,along with it I've added 2 tsp red chilly sauce and a pinch of food coloring (It's optional if you want to use it or not).

  • Mix it well.

Serve:

  • Take naan ,apply the sauce spread it on the half side of the naan only add sliced onions (optional) after that place the tikki inside it and fold the other half of the naan.

  • Do this step for the number of Naan you want to make

Cooking:

  • You can take a grilling machine or a panini maker / grill toaster (Anything that's available).

  • I'll prefer a panini maker ,it's easily available also.

  • Apply some butter and then place your Alu Naan to grill it.

  • Okay so the Alu Naan is ready take it out and serve it.
